  • After the fruit reached optimum ripeness, it was left on the vine for a further week in mild Autumn weather.
  • This ensured full ripeness without the “greens” or capsicum flavours evident in some Cabernet wines.
  • Dashes of Malbec and Merlot add middle palate, and barrel maturation in French hogsheads and barriques has added a further dimension.
  • The fruit and oak are marrying nicely and will continue to improve the wine for 5 – 8 years.
