Our Wines

To produce consistently outstanding wines requires a single-minded determination not to compromise. A total commitment to quality in site selection, viticulture and winemaking. You must have the best.

Sauvignon Blanc Semillon

Light, dry and delicate. Unlike many of these blends from Margaret River, ours has no residual sugar. And we use no oak.

The two varieties are ideally suited to the cooler Karridale climate, and produce lovely generous flavours. The tropical fruit of the Sauvignon gives the bouquet and front palate, while the Semillon adds weight and middle palate complexity.

It's great to drink when young, but will soften nicely and develop a "honeyed" character after a few years in the bottle.

Verdelho

Our Verdelho fruit comes from the north of the Margaret river region. It is fermented dry, and receives no oak treatment. In some years we may add a splash of Chardonnay to fill out the middle palate. This will vary according to vintage conditions.

Big, full fruit salad flavours, crisp, clean finish. An ideal aperitif wine, or an accompaniment to chicken, pork or Asian dishes.

Our Verdelho should develop over five years, but why wait? Enjoy it in the first couple of years.

Chardonnay

We have planted Clone 1, Clone 5 and the shy bearing but full flavoured Gingin (Mendoza) Clone.

Chardonnay is the first variety harvested, in mid March.

We believe that the best Australian Chardonnay does not need the augmentation of oak. Our climate and our fruit is different to that of France's Burgundy, and we don't need to imitate that style of wine.

Our aim is to showcase the abundant fruit flavours we can achieve with meticulous viticulture and low yields.

Shiraz

Shiraz is well suited to the Karridale climate, and our wines to date have achieved spectacular show results and critical acclaim, and market recognition.

The fruit is usually harvested in early April at between 13.7 and 14.2 Baume, just as the berries start to shrivel and feel velvety. Extended skin contact and agitation after crushing ensures a purple/black colour. Ageing in mainly French oak imparts flavours which complement but never dominate the fruit.

The wines exhibit lovely pepper and spice characters, with intensity and length. They drink well in their youth, and promise years of development in the cellar.

Cabernet Sauvignon

The fruit comes from the Karridale vineyard, and from vineyards we manage at Osmington and Witchcliffe, north and south respectively of Margaret River township.

We age the wine in mainly French hogsheads and barriques, and blend in a little Malbec and Merlot, to add middle palate.

It is our aim to produce a Bordeaux style which ranks with the best in Margaret River.

Deep purple colour. Intense cassis and cigar box bouquet. Rich, opulent, ripe fruit on palate and a full, smooth finish.

Wines which can be confidently cellared for ten years, but which is elegant and stlish, and a good drink in its youth.

Merlot

This is an exciting variety for the cool Karridale climate. Results to date have been very encouraging, with gold medals (Adelaide 2001 and 2002) and a trophy (Adelaide, 2001) already to its credit.

The wine spends a year in 75% French and 25% American oak, and then time in bottle before release.

A full bodied Merlot which will go the distance.
